Chicken Breast

  • A quick and simple dish for a mid week dinner.
    Sous Vide chicken breast for about an hour & a half to 63IT. On top of a Caesar salad. It's becoming a regular due to how easy and the less mess there is.

    Jumbuck 7 burner with hood. Baby Weber kettle. 52" Kettle. Weber Go Anywhere. 5' SS Spit rotisserie. Offset smoker. Akorn Kamado. :) ASMOKE AS500N. Hibachi.:bbq:

    we had Weber Q chicken tonight and I always go for about 64c in the breast. It's fine and goes up when resting anyway. Heston says anything over 60c is OK but I go at 62 minimum. 74 is overkill.

    It's not just temp, it's also time at temp. The US food agency has a graph somewhere where it plots how long the meat needs to be at a given temp to kill the baddies. If I find it I'll post it up.

    That's for slower cooking. You don't need time in a Weber Q zinging along at 220c plus.

  • Nice! I've been doing chicken breasts in the water bath a fair bit, makes a great meal so easily. Last one I did was cooked with a little coconut milk, chilli, fish sauce, sugar and served on a vietnamese coleslaw. Probably the most juicy and tender chicken breast ever cooked at that temp.

  • That sounds pretty nice @Kookabanus I think I'll give that a go soon. Also want to try some Ginger, Soy, Sake etc. for a Teriyaki flavour.

    For easy teriyaki sauce remember
    3:3:1
    3parts soy sauce (Japanese soy ie kikoman)
    1 part mirin (sweetened sake,avaible Asian shops)
    3 parts sugar.(I use 2 parts)
    Mix ingredients in pot,low heat until dissolved,cook chicken until still pink inside,then add to fry pan and coat in teriyaki sauce,cook to desired temp and serve with anything u like.

    I'm doing some chicken breasts tonight but they are frozen.....I'll thaw them out during the day but was just wondering if they could be put in the bath frozen ? In other words, can a sous vide machine be used to defrost meats without cooking them ?


    Anyway, I hope to get them defrosted in time to throw them in some Game Changer brine later today.

  • You definitely can put them in from frozen, I think I read somewhere to add another .5 of the total needed cook time if cooking from frozen
