Had some friends come over for a weeknight dinner so needed something to knock up after work and decided to try a reverse sear a Black Angus tri tip on the ole Hark Tri-Fire. My first attempt at a reverse sear and my first attempt at cooking tri tip and happy to say I'll be doing both again!
Smoked the tri tip in the main chamber until internal temp of 120F and then gave it a bit of a rest while I cranked up the fire and then seared it over the flames on the cooking grill in the firebox.
