Yes, it is time for the Annual Turkey feast here in Virginia. The 11kg bird has been in the brine since last night and will go on the Memphis Pro in about 12 hours...Will hope it comes out something like this...

It is a pork butt I am trying to see if I can cure and make it taste like Bacon. Pork Belly is about $9/kg here, this was about $2.50/kg, so if it works...a great success for a Cheap Screw like me. So, lets see, if it works, I eat more bacon and ingest more Sodium and Nitrates...man, no wonder JPL in Pasadena laughed at my job application...

I started the Bird on the Memphis Pro, but both Kristin and I agreed that we have missed the smell that a cooking oven Turkey creates through out the whole house. So after 2 hours of Hardwood smoke, into the oven it goes!
