So after a nice early start to the day everything went along smoothly. Up at 4 and got it in at 4.40 then went and napped on the couch while it settled itself down. Sat nice and steady after about the first hour at 260f. Wrapped after stalling at 165 for 90 minutes. After wrapping it took off quite quickly and was done about 2 hours later. Had a nice 5 hour rest until dinner time. Was nice and tender maybe a bit over cooked as it failed the finger test and just fell apart, still sliced nicely though. Everyone loved it though so that's all that matters. Dad so much so he went back for seconds.
Also made myself a nice double cheese burger with the off cuts for lunch.
