Hi,
So had to go to an old mates to pick up some prawns for tomorrow, he is in the seafood business.
Old mate has asked me to smoke some scallops he has given me for a test run for him.
Can any experts throw some suggestions my way please, would be appreciated.
1. to brine in what?
2. Smoking method.....Hot/Cold
3. Do I aim for a target temp. as per normal...ie: 63c
4. Any other thoughts?
