So yesterday I experimented with the Smokemaster Wood Chips And the Smokai attachment.
Did 2 hams, x 1 in the Coolibah gasser and x 1 in the Z Grill with the Smokai attached and using Smokemaster wood chips for extra smoke.
As mentioned elsewhere I used a 60% Redgum/40% Mountain Ash blend.
Sure did smell very nice around here yesterday morning.
Must say I was surprised at how well the Wood Chips perform in the Smokai…..this is going to take the Z grill to another level IMHO.
Here's some pictures, can you pick which ham was cooked in which Smoker??

Thought it would be an easy pick.!

How long dd you smoke them for ?
I have trouble keeping my Smokai burning. It always needs a few blasts from the torch along the way.

How long dd you smoke them for
Not 100% on that one, as it was burning so well I turned the pump down & it more or less went out.
Had to do a little re light and turn fan back up again, not fun when your blow torch won't blow properly....back to Bunnings it goes!
I would have to say after the first use of the Smokai, I would possibly just run the pump on full and let it do its thing....more experimenting needed.
Was erring on the side of a Smokai virgin yesterday.
But I would say this was money well spent and a good investment.
@DevilsGrill...this is what I recommend if you want more smoke in your Yoder. -
Sorry what is this smokai thingy ? I sue the smoke tube with success but using pellets, does this allow you to use chips too ?
And I know I can just google it but this is the reason I’m on the forum to learn ! Hehe

That it does @Gurilla....this was a major factor in grabbing this piece of gear.
So it was done on the Z Grill using pellets as normal, with the addition of the Smokai using Wood Chips!I sue the smoke tube with success but using pellets
Think like a smoke tube on Steroids.

That looks great @gourmetgalaxy and yeah im very interested as as good as the smoke tubers are I find for optimal results i need to place near the firepot below the heat deflector and as such it cannot be re-fuelled during a cook where as this unit i reckon you could keep chugging for as long as required.
-
Will be firing it up tomorrow morning if your out this way and want a look.

The main benefit I see is the cold smoking application. If you use a smoking tray or tube, some heat develops and it isn't cold anymore. Tubes and trays are good during a cook but that's about it. A smoke generator does both.

Next time you fire it up, I think a little video might be in order.

Thanks to @gourmetgalaxy evil influence ive ordered a Smokai to see how it goes. Hoping I can use the existing probe port (doubtful though) as in not keen drilling holes into the Yoder.

If the probe port on the Yoder is like the one on the GMG, it's too small and probably won't work.
For cold smoking you can use almost anything, even a cardboard box but if you want to do what gg did and cook at the same time, I think a new hole is the only option.

I doubt it too, 40mm if you have the 3 lt magnum ordered.
I don't think you will regret it one bit once you try it out with some good wood chips added to the mix. -
Smokai arrived today and I wasted no time in setting it up. Like I suspected there was no way it was going to fit using the probe port hole even though the hole is big enough the hopper gets in the way so thought I'd give this setup a try where by I removed the heat management plate handle and used the hole to feed smoke into via a rubber coupling. Seems to work so ive just thrown on some salami for a bit of a road test.
Thanks again @gourmetgalaxy for putting me onto th9s unit as it seems incredibly well built and works really well too. Probably could have gone for the smaller size but im thrilled just the same.....CHEERS!
-
Those salamis look so good !
Decent amount of smoke too assuming all of it’s from the smokai?
Just did a google.. they seem like a decent bit of gear! Look decent for cold smoking to do cheeses or even getting some smoke into something before cooking.. smart idea and can control the smoke output too.. wich ideal would be good for me as I don’t want to bother the neighbors every weekend with smoke especially now with summer.. before could get away with as there’s wood fired heaters in the area
-
Nice handy work there @DevilsGrill....glad you like the unit.

They are mainly used for cold smoking.... @Gumb does his cheeses with the smaller version
Those salamis look so good
Soooo Good ....I'll have 6 please!

The Smokai smokes like a bushfire if you need it to. So far im loving it and so much easier to use then my Aussie Smoke Bloke generator which I constantly had to tend to to keep it going (great otherwise) -
So far im loving it
Yep there is a lot to love about this piece of gear...
