Don't get hung up on the final temp, every piece of meat will be different. This is where you need to probe it to feel how done it is.

I have it connected to igrill 2. Temp has goine up pretty quickly to 60 degrees. its been in 2 hours.

You may want to watch the bottom side too.....I did find the brisket I did got a real hard bark underneath...

Currently sitting at 64 degrees, i think its stalled. I have turned it over and gave a little spritz. Nice bark on the bottom side, its now fat side down. Smells delicious already.

Can you detail the mod on the Fornetto and post the info in that other thread about it ? I think a few people would be interested in what you did.
good looking brisket too. As Wazza says, take it out when it probes easily and that may be a bit longer than you think.
