Hot smoked salmon - I tried for a steaks but got shot down 😜
Brined in salt sugar garlic and pepper for 3 hours. Prob could of gone 5-6 hours I reckon .
Left in fridge for an hour before going into the primo at 110 with some spotted gum For smoke . Sprinkled with brown sugar every 20 mins .
Pulled out when internal hit 63.

2kg Cape Grim point. Embarrassingly my first attempt at brisket. Served with the first corn bread I've cooked too, and some Mac and cheese. Wasn't a fan of the corn bread, was a bit dry (maybe I over cooked it?) and too sweet. The brisket was great. Easy 5 hour cook at 135C. 3 hours with some cherry wood, 2 hours snuggling with some ginger beer then a 3 hour rest. Only trimmed a small amount of hard fat off at the start and used a steak rub I had in the cupboard. Kept it simple. Happy Easter all.
I have always thought of this dish as having very finely sliced pork. Since I have had it like 3 times in my life I am obviously an expert! Pretty sure it can have just about any protein, or none at all, but that is my mind set. So I am roasting (325°) some pork loin (gonna guess about a 2 lb. section). It is has been trussed & rubbed with2 Tbsp. Kosher Salt, 1 Tbsp. Garlic Powder, 1 Tbsp. Onion powder, 1 tsp. cracked black pepper and about 1/4 cup dried Sage. It was vigorously rubbed into the meat and let sit at room temperature for 15 minutes.
Will finish tonight with the rice noodles, seasoned broth, bean sprouts & scallions & the thin sliced pork (many ingredients missing, I know).
Wish it had dawned on me earlier to slice the loin raw and cook it in the broth!

Visitors yesterday so a big cook up using the Aldi/Hark gasser, The Z Grill & the Masterbuilt 560.
Big day = Big clean up...
In the gasser some chicken snags , pork snags & cheese/ jalapenos.
In the Z Grill we had Honey Mustard Pork tenderloins & Potato bake.
And the Masterbuilt took care of some Roast Spuds, Honey Soy Chicken wings & some red hot ones.

roast beef picanha 1.8 kg of goodness
About a 1hr 10 min cook on the weber for some of the best roast beef I've ever had. Saw the guy from "how to bbq right " do a wagyu one and couldn't find any vacuum bags today so thought why not. Simple salt and pepper rub.
