I got a piece of porterhouse that is not great, steaks were tough with gristle. Can I use the remaining uncut piece approx 1kg as a pot roast or similar?

Do you have a sous vide machine?
Otherwise a reverse sear might be worth a try. Sounds like you need to get some time into the cook. Not the best cut for a pot roast as it will dry out and become tough. Hence sous vide if you have one.

I dont own a sousvide- but reckon it would be Fine to try that way.
I’d pot roast it - slow cook or just dice it for stew Or curry.
I'm not sure about a pot roast either. Wazza is on the money about it not being the right cut.
I'd be chopping it up for a quick stir fry.
hmmm, Gumb's mention of stir fry got me thinking. (And yes I think definately quick stir fry over curry)
Made me think hibachi, but any really hot charcoal will do. Go for a Korean or Japanese bbq. Slice really thinly and marinate in a couple of different sauces. Then cook very quickly over raging hot charcoal. Slicing really thinly should help a lot with texture. Eating straight of bbq is good fun.
He's also got his wok burner now so I think it's a good chance to give it a run.
Yes, thinking stir fry is the go. Might be enough left to try hibachi in a day or 2.

Slice it up paper thin and chuck in some bulgogi marinade, then have yourself a Korean BBQ.
