Dim Sims on the BBQ.
I know it sounds stupid but soaking the Dim Sims overnight in stock is a good thing, helps them stay moist and adds flavour, Chicken stock, smoked Paprika and some chilli this time but add any flavour you think will be good.
Inject more moisture if you have time.
Smoke at 150°C for 20-30 min
Since when did dim sims need more flavour ? I love 'em just the way they are.
That bbq is a disgrace, it's far too clean...
You should see the rest of his collection. It's even cleaner !
