G'day everyone - another sandgroper (not by birth so pls don't ban me ) checking in.
I have a Kamado Joe - had it for a few years and don't know how I ever lived without it. I also have a gas bbq that I use to store things on/in like a spare bag of charcoal and other KJ stuff.
Have done stuff like beef ribs
And only relatively recently, turned my back on my trusty sous vide in favour of reverse sear
Also did some skirt steak w/ Mexican marinade that came out crackingly well (so well that idk where the pics are, oh wait lol, see beer comment below). Will post that at some future point.
I firmly believe that the most important KJ companion is a cold beer, backed up by at least a cold slab in the fridge, locating within easy staggering distance of the barbie.
