Marlin

    Had some Marlin fillets dropped off to me a couple days ago . Mate jumped in 25 KM out to sea and speared a 100 odd kg fish . =O

    So cut it all up and put it in a brine for 10 hr then smoked it in the primo with some apple and spotted gum wood.

    Very happy with the result and will dk more next time …

    I don't think I have ever seen Marlin cooked or raw. I thought it would be a white fish like Swordfish. We are talking about a Billfish Marlin?
