3 hour cosco ribs, 150C and foil boat at about 2 hours in.
Hands down the best ribs I've done. My ribs before now have been enjoyable but never at the same standard as a good rib restaurant, so I'm super happy with these. (Finally).
Got ribs on now, didn't bother trimming them, just salt and pepper. Ironbark smoking wood, 125C.

Messing about today again with the new offset doing a beef blade today trying a mix of blue 'n red gum.... burning quite clean.. 13-14 hours later... sitting in the esky now !
Wow, hungry bunch round here... got quite a bit left-over still though so pulled it for tomorrow's munchies but that's a new month/different story giggle....
