Now what seasoning would go in/on a lamb Burger? Does cheese go well with it like beef?

I've done lamb burgers in the past, but tend to use Italian mixed herbs in the Party.

Ribs
Great looking ribs. Nice and meaty.

Love it. Gas or wood ?
Gas to get the temp up to 400 C, turned it off, then used the rope sealed door for 30 min(tray covered with foil). Then removed the foil and turned the gas on again on low for 15 min without the door, turned gas off again and left in the oven for another 20min with the door closed.

All AP, not for me. Been using 50/50 with OO. I think I am going back to all OO.

Not the best photo, but by far the best pork belly I’ve ever done. Perfect crackling atop buttery flesh. Around the table there were shaking heads, silly grins and muttered oh- my-gods.
I used a bacon hanger to cook the belly vertically in the kettle, hanging from a simple frame I made out of aluminium flat bar. If I can reproduce the results, this will become my default method.

I want to try hanging a belly, now. Some meat hooks should work.
