  • I've been doing them faster the last 3 or 4 cooks. Not the way he does it in that video though. I do it about 125ish for an hour then foil boat and up the temp, try to get them done within another 1-2 hours (depending how meaty they are).


    I'm not claiming they're as good as the full 321 method might be from a pro, but they're better than the 321 method when I try it, plus I can put them on at 3pm and still eat in daylight.

  • I learned long ago, Fast Eddy was right. Baby Backs, 3 hours at 275°F and Spares just an another hour. They come out perfect every time if your pit temps are true! No foil, no spritzing, no FTC BS. Just cook that way, sauce if you want and eat!
