Bao Bun time

  • Picked up a nice piece of bone in pork belly on special at coles. Salted and in the fridge uncovered.


    Vegies cut up.




    Selection of sauces, all store bought, didn't have time to make my own. The buns were also from the frozen section off the supermarket, again no time to make my own.

    In the Akorn. I managed to score the skin into the size pieces for the bao buns, so all slices had the crackling intact.

    Nice, I don't cook pork often but I assumed it would be hard to get good crackling in the Akorn or any kamado... Any tips? I'm addicted to Bahn Mi at the moment so am keen to give it a go.

  • Get the skin really dry beforehand, salt to draw out moisture and uncovered in the fridge so that moisture is evaporated off.

    Scoring like I did also allows the fat to render out and allowing skin to crisp. Crank it at the end to finish it off.

    Getting lucky sometimes also helps ;)

    Only been getting them from the shops so far lol.


    Been a while since I've had one as I've been on a health kick, thinking Ill do some sort of bowl variation with pork belly and pickled vegetables and rice.... Unless it's cheat day/week then I will bake the crispy bread rolls also haha.

    My best crackling has actually been the Akorn. Done it three times, better than I've ever managed in my kettle.
