It's that time of year again for all the Smallgoods shows to open for entries.
I've just finalised and paid for my entries to Australia Meat Industry Council Charcuterie Excellence Awards.
I've entered Coppa, Basturma, Pancetta and my first Prosciutto Di Lago Rosa.
Delivery is early July and Judging is mid to late July - I won't know results until 25th (ish) of August.
They've changed the procedure after last year so instead of being regional -> state -> national it goes straight to National. RASWA & RASNSW comps opening the next month or so, so please all keep your fingers crossed for me!
