Ok just a quick wrap on my little 5hr or so cook from yesterday, for those that didn't watch my periscope i did 2kg of Cape Grim Beef Cheeks in my ProQ Elite20 over charcoal and cherrywood and the results were outstanding. 3hrs of smoke then into a hot braise direct over coals to bring them up to finishing temp I rubbed them down the night before with all the usual suspects and left them in the fridge over night these things are meat lollies for blokes(and ladies too!)
2hrs in great colour
They are gooood!
They didn't last long once they hit the table.
