Display MoreFired up the pro smoke this morning to cook a brisket.
Been a long time between cooks so giving it a good hot burn to start up to clear out any unwanted guests that may have called it home for the last couple of months and jagged the exact spot on my grill with the digital thermometer that matches the one in the hood.
Never have been within 50f before. Might turnout to be a good day!
I thought the black rocks were a forgotten brisket with fly larvas
What's the warranty on these? A friend wants to buy one, so far the cheapest he's found is $349 from Amazon

This was our NY Day lunch. A 4Kg Spit Roasted pork shoulder, loin and belly, plus some Greek pork sausages, Aussie sausages(a couple of them burnt), lamb chops, chicken souvlaki and vegetables.
The spit took almost 4 hours to cook ( 2.5 hrs wrapped in paper and foil and 1+ hour uncovered). Had to improvise and use the BBQ lid( not hinged) to protect the meat from the elements
We are still enjoying the leftovers and we had 5 guests(family) who took lots of food home

These things really get up my nose. There is no such thing as an Air Fryer.... It's an oven.
A special type of oven, yes, called Air-Fryer .
Microwave is an oven too, but we call it microwave.

Done in the Fiammetta, roughly 20min indirect heat with the lid closed, and then about 6min sear on direct heat/flame
We had 1/2 steak each and the kids had the rest, so it was 3 vs 1. To be honest, the end result really surprised me, it didn’t taste or feel like a well done steak.
Although I like my meat less cooked, I wouldn’t mind it eating this again
I tried Gumb, but my boss is a childcare teacher and she wouldn't let me take the meat out any earlier. I just need to find a way to hack the thermometer to show 10-15 degrees more than the actual temp
Wife asked for Angus Scotch Fillet today, had to cook it well because the kids had to eat too, it came out supertasty, juicy and tender.
Seasoned with Maldon Salt Flakes, black pepper and garlic powder. Indirect heat up to 59 Celsius(went up to 62 when resting for 5 minutes) and then direct heat/flame to sear up to 76 degrees. Boss(wife) said it’s the best thing I’ve ever cooked ☺️
