There is a specific short rib. Is it ribs 6 to 10 or 12?
We used to cut ours at Harvey beef from 5 - 10. 3 ribs remained on hind quarter, which become the head of the strip loin (poterhouse)

I asked the same question on here.... It came down to lifestyle. I went with a pellet smoker because it lets me cook, be a dad, a husband and get the chores done all at the same time.

Guess who's lovely wife bought her husband 1 of these for Xmas... She's a good girl that wife of mine. Got me charcoal and 2 spare cooking grates too. What should i cook for a test run on it, and should I be buying a chimney to start the charcoal?

My briskets are a 3 day process... I trim then dry brine my briskets overnight, covered in glad wrap, then I'll put my rub on and leave that on overnight also, uncovered... Cook on the next day. I usually start on a thurs/Fri evening.

60c mate, the wife wont touch anything less... Was tender as and moist. Best piec of steak shes ever eaten she said...

No mate, my bad. Was very tender and the good wife was happy. Served it up with a chimichurri sauce and a couple of salads.
