Bentley Meredith .....I always give my snags a quick 1>2-minute blanch in boiling water then let cool down in fridge before I smoke em.
You might like to give it a go & see what you think of the results.

I'm 99.9 % certain that HectorAsado who is a member here, but we haven't seen for a while used a Hark Big Boss on his food trailer for the exact same reason you mention.
Temperature control may be an issue, but you know that saying...."where there is a will there is a way.
Some of the experts will chime in with their thoughts no doubt.

A Ziggy gasser from BBQs Galore is worth consideration in your quest for a good gas Q IMHO.

Personally, I would retire it. Especially given the issues you mention above.
Are you dead keen on a gasser? ....... Weber is a good brand as we all know, but there is such a wide range of options on offer now perhaps it's time to look at some options.....PELLET or CHARCOAL has some great options available.
It really comes back to what you want your new Q to be able to do!!

It's been a while since I did pork ribs as I had gone off them a bit due to a few average results.
These were from Costco and had been buried in the bottom of the freezer for a LONG time.
A little injection of Apple/Pineapple juice & some Worcestershire sauce & into the fridge for a few hours.
Out to dry them off then rubbed with a combination of ZGrills delicious dust & some of my own pork rub.
Into the Zgrill MINI @ 107c for a 2.5/1.5/20 min session.
On a freezing windy Thursday in Melbourne the MINI did not miss a beat!
Wrapped after the 2.5 mark with some butter, honey, brown sugar & apple juice.
For the last 20min they got a coating of a commercial rib sauce I made.
Glad to say these were excellent after a short rest while I cooked some vegies to add to the plate !

So I see KJ has just thrown all of there customers who supported them with iKamand pit controller for KJ under the bus by simply deleting the app so effectively the controller is useless.
Seems to me that MiddleBy USA & Australia just don't give a shit about their customers at all.
As I said elsewhere after my dealings with MiddleBy Aust. I will NEVER spend another cent on any of their products again.
There is NO excuse for crap service these days with all the competition out there!!
due to the inconvenience, please come into your local store at your earliest convenience with the product and we will offer a refund.
Good on BBQs Galore for taking such swift action on a problem that's not really their responsibility.

I agree 100%.... I commented in another post in how disappointed I was with this stuff ...... no bite to it at all.
