    I realize that Osso buco is cross-cut veal shanks but I would think theses would be a great substitution. Wish I could find these in Mayberry! I would make some

    If you click on the 'full image' tab when uploading, the pics will be put into the post larger, and I think these shanks need a larger pic.... yum :yum)

    Welcome mate.
    Brisket sounds great, one of my favourites to cook and unlike Gumb I do really rate the bark but I agree with him that the flavour of the meat is the most important.
    Jimmy70 the boarders are open for us Territorians so might just head up…
