    With things starting to open up here in NSW I've had a chance to take the new gear out for some more use, even had a chance to use the "granddaughter lens" on an actual granddaughter.

    BBQ Chicken pasta, love a mid week meal like this. This was a de-boned chicken, stuffed and rolled with the juices poured over the top.

    BBQ Chicken with some crispy spuds and sweet potato. SWMBO organised the salad - no dressing - quite dry - went well with the spuds.

    Have been flat out so haven't posted up some of my cooks, so here goes:

    Spotted some pork spare ribs going cheap at coles, so thought why not?

    Not BBQ but anyway……
    ‘Pla Rad Prik.’
    Thai fried fish with chilli sauce.
    Traditionally done with a whole pan size deep fried Golden Snapper or similar, but had to settle for a fresh Barra fillet tonight. Life’s tough!
    It was sensational!

    Saltbush Wiltshire lamb shoulder on the ProQ. This is the best tasting lamb I’ve ever eaten!

    I gave it a burn in last night, mainly to clean up the deflector plate and check the new seals. Got up to about 280c and it came out fine.
